Watermelon Salad with Cucumber

  • 3 tbsp lime juice
  • 1 small watermelon, cubed
  • 1 cucumber, diced
  • 8 oz feta cheese, crumbled
  • salt and pepper to taste

1. Combine the watermelon, cucumber, lime juice, salt, and pepper.
2. Top with crumbled feta and serve immediately.

  • 2 tbsp red wine vinegar
  • 1/4 c olive oil
  • salt and pepper to taste

1. Place all ingredients in a blender and blend until smooth.
2. Refrigerate for at least one hour before serving.

All-American Apple Pie

  • 2 refrigerated pie crusts
  • 6 c apples, cored, peeled and sliced
  • 3/4 c sugar
  • 2 tbsp flour
  • 1 tsp cinnamon
  • 1/8 tsp salt
  • 1 tbsp lemon juice

1. Press bottom pie crust into a pie pan.
2. Combine remaining ingredients and pour into crust.
3. Top with the other pie crust and pinch ends together.
4. Bake at 425 degrees for 45 minutes.
